
Amid rising tensions in West Asia and a looming energy supply crisis, new concerns have emerged about India’s restaurant industry. The National Restaurant Association of India (NRAI) has issued a detailed advisory to its members amid fears of possible commercial LPG supply disruption. The organization has appealed to restaurant owners to immediately implement measures to save fuel and maintain smooth operations.
NRAI has said that the supply chain of commercial LPG may be affected due to the current geopolitical circumstances. If the situation worsens, the restaurant industry could face serious operational challenges. In view of this, the organization has asked its members to take steps like reducing gas consumption, streamlining kitchen operations and adopting alternative energy options, so that business and employment can remain safe.
What is the purpose of NRAI’s advisory?
NRAI says that the purpose of this advisory is to maintain the continuity of the restaurant industry. The organization has warned its members that if the availability of LPG is reduced, kitchen operations and service arrangements may be affected. Therefore, restaurant owners have been asked to adopt fuel saving and operation management measures from now on.

What steps were suggested to save LPG?
NRAI has asked restaurants to give priority to such dishes which consume less gas. It has been advised to temporarily reduce dishes that take longer to cook or use more gas. Apart from this, it has been asked to adopt measures like use of lid, use of pressure cooker and batch cooking while cooking. The organization has also said that leaving burners on during idle hours should be avoided and kitchen staff should be trained about gas savings.
What measures were suggested to keep the operations smooth?
NRAI has also given several suggestions to restaurant owners to increase operational efficiency. This includes the use of a centralized kitchen system, preparation at off-peak times, and shared use of kitchen resources. The organization has said that steps like reducing operating hours at places with low demand can also be taken temporarily.
Alternative energy options and what to expect from the government?
The organization has also advised the use of alternative appliances like induction cooking, electric fryer, combi oven and electric rice cooker. NRAI says that use of partially electricity based appliances can reduce dependence on LPG. The organization is also in touch with the government, demanding that the restaurant industry be recognized as an essential service sector and commercial LPG supplies protected.
